It is very important to note that post harvesting, tomatoes should not be refrigerated. This is because a drop in temperature can take away the freshness and flavor from the fruit.

Tomatoes that are cultivated on the vine are generally the best if consumed within two to three days of harvesting. In case, it is not possible to consume the entire tomato supply within three days a good option would be to use the tomatoes to prepare tomato sauce. The sauce can be refrigerated and used over a given time period.
